Chocolate Drop Cookies
These chocolate cake like cookies are easy to make and a wonderful alternative to cupcakes.

- 1½ cup all-purpose flour
- ¼ tsp salt
- 1 tsp baking powder
- 2 oz baking chocolate*
- ½ cup melted butter
- 1 cup brown sugar
- 1 large egg at room temperature
- ½ cup milk
- 1 tsp vanilla extract
*Cocoa Powder Alternative
- Omit Baking Chocolate
- Add additional 2 tbsp butter
- 6 tbsp cocoa powder
Chocolate icing
- 2 cups icing sugar
- ¼ cup cocoa powder
- ¼ cup softened butter
- ¼ cup strong brew coffee
- ½ tsp vanilla extract
Orange icing
- 2½ cups icing sugar
- ¼ cup softened butter
- ¼ cup freshly squeezed orange juice
- ½ tsp orange extract
- food colouring
Sift together dry ingredients.
Melt chocolate then add it to the melted butter.
Then beat in sugar, egg, milk and vanilla.
On low speed beat in dry ingredients.
Let stand of 10 mins.
Bake on a lined baking sheet for 8 to ten minutes in a 350°F oven.
Icing
In a medium bowl beat softened butter and icing sugar until combined.
Add the extract then 1 tablespoon of the liquidat a time until you use all 4 tablespoons or reach the desired consistency.
If the icing is too thick, add a little bit more liquid, too thin, add a little more icing sugar.
Ice cookies with approximately ½ tbsp of icing.
Don't have baking chocolate? Use 6 tbsp of sifted cocoa powder and add an additional 2 tbsp of butter.
For orange chocolate drop cookies add the zest of one large orange to the batter.
